Calgary Burgers

I've eaten burgers in every province and half the states. Nothing—and I mean nothing—touches the Brûlée Burger at Clive Burger on 17th. You smell it before you eat it: beef crust hitting the hot griddle, then the caramelized onions releasing that deep, sweet, almost burnt complexity. The first bite, your teeth break through the crispy edge of the thin smash patties, and then you hit the cheese—perfectly melted, running slightly into the onions. The sauce is something they'll never tell you about, but it's got heat, sweetness, and this umami depth that coats your whole mouth. The yolk-like richness of the beef fat hits your tongue and suddenly you understand why people wait 30 minutes. I took my buddy from Montreal there last summer. He ordered one, sat silent for the entire meal, then sat in the car for five minutes afterwards just staring at the dashboard with this look of existential realization on his face. He said "I need to move here." He did. That's what a good burger does. It changes your whole worldview.
